Saffron, which comes from the yellow-orange
stigmas of a small purple crocus, is the world's most
expensive spice. Each flower provides only three stigmas,
which are hand-picked and then dried in a labor-intensive
process. It takes more than 14,000 of those tiny stigmas
to produce one ounce of saffron. Fortunately, you don't
need to use much of this spice, the backbone flavoring
in such traditional dishes as bouillabaisse, Risotto
