Our approach to producing Pinot Grigio is to do
everything possible to allow the fruit to express
itself and to retain its brightness. With that in
mind, we gently handle the fruit, quickly pressing
it and putting it into a stainless steel tank where
we ferment it at cool temperatures. While Pinot Grigio
possibly can age, our philosophy is to enjoy its youthful
characteristics. The wine, therefore, is bottled early
and released for immediate enjoyment. This wine is
well balanced with generous spicy, fruit and an oily
mouthfeel reminiscent of a wonderful Gewürztraminer.
